I think the mistake you are making is that everyone wants to live the same kind of life. Where to live happily, you want to be reasonably relaxed, not stressed, spread your work well and evenly, take care of your health and enjoy your meals.
Not everyone is like that. Actually the majority probably is, but not everyone. Some people need to be stressed a bit, overloaded by work and work in crazy bursts to feel happy! They will work like crazy for three weeks and then procrastinate for another week or four. And when they are in a burst mode, they certainly won't be interested in taking a 2 hour break for a nice meal and go collect herbs from the front of their house.
These nutrient thingies can be a great thing for them.
Maybe you think these people don't know what life is about and how to properly enjoy it. They will probably live a shorter life and be sick more often on average, and maybe even depressed more often, but they can't live in any other way - at least in some period of their life. And after all, how they live their lives isn't really any of your business. ;-)
